We recently visited Shucks Maine Lobster in Richmond, ME. Instead of boiling lobsters to detach and sell cooked meat, Shucks applies high pressure water to kill the lobster and detach raw meat from the shell. Whole Foods deems their pressure processing technique as “the only humane way to kill lobster.”
Raw meat offers a more unique and flexible cooking experience.
After features in The Boston Globe, Wired, and our very own Free Radicals: On the Water, we decided to visit them for a video interview and tour. During our interview, we were able to see the processing and feel the ease of shucking for ourselves.
